mentaiko pasta

I actually like pasta but I can’t eat it often because of my stomach. When I do, one of my favorite pasta sauces is mentaiko sauce. It’s a classic Japanese style pasta sauce and very simple to make. As long as you have mentaiko! Or you can always buy the pasta sauce package. But I’m not sure how westerners will take to it though…



明太子パスタ

実はパスタは好きだけど、うまく消化できないので、あまり食べません。でも食べる時、ひとつ好きなのは明太子パスタです。典型的な和風系パスタですね。明太子があれば作るのも簡単だし、なかったらスーパーでパスタソースのパックも簡単に手に入るし!でも西洋人はどうなんでしょうね。

I HATED eggplant when I was little. But you know how as you get older, your taste buds change? I don’t love it now, but I don’t hate it either. And one eggplant dish I like is a sweet miso based sauce. This is one that I usually make if I buy some eggplant. Even my foodie partner who doesn’t like eggplant will eat it.

One nice thing I like about asian eggplant is that it’s long and thing rather that the fat bulgy ones I used to buy in the US. It does tend to be expensive but there’s a weekly vegetable stall nearby the apartment that sells a bunch for cheap! Oh and I remember when I was little, I didn’t know the english name for eggplant until I was in 3rd grade. I just called it Nasu.


なす味噌とピーマン

昔はナスが大嫌いだった。でも年取ると下が変わるっていうでしょ?だから今は大好きとは言えないけど、嫌いでもない。で食べるならやっぱり甘目が好きなので、よくこのなす味噌を作ります。なす嫌いの彼氏も食べれます。

日本に住んでる皆さんにとっては当たり前だけど、私はアジアに移住してこの細長いなすの方が好きです。アメリカのはよく太くてなんか使いづらかった。でもなすは以外と高いかなと思ったけど、アパートの近くに週一で新鮮な野菜を売ってる人のは結構安い!そういえば、昔3年生ぐらいまで英語でなすは知らなかったな。英語でnasuって言ってたかも。

I wonder why I made this… I must have a lot of radish to use up. Or maybe my foodie partner was having a bad stomach day and I wanted to make something easy to digest. Anyways, it was a good easy classic simmered Japanese dish. Feels hearty but not heavy. Probably more of a fall/winter food rather than in this warm weather though.


大根と卵煮込み

なんでこれ作ったんだろう…大根が余ってたのかな。それとも彼のお腹の調子が悪くて、消化しやすいものを作りたかったのかな。まぁ、簡単で定番の和食ですね。ホクホクで温まる。今の暑い季節より秋冬のほうがいいけど。

When I was living in New York, this was a dish I would make often for lunch. It’s pretty simple although a bit messy with the potato starch. One key point I’ve realized is after coating the tofu, it’s better to put it on the heated pan right away so that starch doesn’t come off the tofu and crisps nicely. Although with the sauce, it’s not crispy in the end anyways. If you don’t want a spicy sweet sauce, you can eat the fried tofu dipped in a soy sauce ground ginger mix.



甘辛豆腐ステーキ

ニューヨークに住んでだ時、よくお昼に作ってたました。片栗粉で少し散らかるけど、結構簡単なレシピです。気づいたコツは豆腐を片栗粉でまぶしたら、すぐに油をひいたフライパンにのせること。そうすると、豆腐はいい感じに揚がります。結局ソースで最後はサクサクしてないけどね。でも甘辛ソースが嫌なら、揚げた後生姜じょうゆと食べると美味しいですよ。

When I feel like the dinner menu I planned is lacking, I make fried rice for my foodie partner. Or if I’m lazy, his lunch will be fried rice.  Of course I can’t make the perfect consistency like a chinese restaurant, but I think I’ve gotten it down so it tastes pretty good. I also have a magic condiment called tori gara (chicken) soup base! I buy a msg free one so it’s not msg either.  My other trick is mixing the rice with mayo too. Of course, if you’re on a diet, not the best to do. But helps make the rice less sticky.


夜ご飯が物足りない時やお弁当作りが面倒くさい時、彼氏のために焼き飯を作ります。もちろん中華レストランみたいにパラパラにはできないけど、味は美味しい方だと思います。でも、よく魔法の調味料に頼ります。鶏がらスープの素!でも無添加のを使っているので化学調味料の味じゃないですよw。あとは、ご飯をマヨネーズと混ぜておきます。そうすると少しパラパラになるけど、ダイエット中はよくないね。

Sweet potato season is probably ending soon. We recently bought a lot of sweet potatoes from a lady with a sweet potato truck. And now I need to find some recipes to use up the pile. Steamed, boiled, baked potatoes are good but can get tiring after awhile. As much as I like sweet potato breads and cookies, they don’t use up a lot at once.

Here’s a simple quick recipe that’s easy and popular for dinner parties.


スイートポテト

サツマイモの季節はそろそろ終わる頃でしょうね。最近トラックでさつまいもを売ってるおばさんからたくさんサツマイモを買いました。これからそれを使い切るアイディアを見つけないと。茹でる、蒸す、焼く、全部美味しいけど、飽きてくる。サツマイモを使ったパンやクッキーも好きだけど、材料的にはあまり使わない。

このレシピは簡単で早い。ホームパーティでも人気の一品。

In Japan, simmered pumpkin or kabocha no nimono is a common winter side dish. When I was living on my own in New York, I started making this since it reminded me of the food I would eat growing up. I always thought it would be hard to make but it’s not. Just make sure to use Japanese kabocha since American pumpkin does not taste good. Whenever I make pumpkin sweets I always use Japanese kabocha too.


かぼちゃの煮物

ニューヨークで一人暮らしを始めた時、煮物をよく作っていました。サラダとかに飽きてたので、もう少しちゃんとしたものが食べたくて。実家でよくかぼちゃの煮物を食べてた思い出があったので、難しいと思ってたけど、案外簡単ですね。ホクホクしてて冬の季節が来た感じがします。

When I was young, my family frequently ate curry. We always used JAVA hot and my mom would add bay leaf, clover, and cinnamon for a deeper taste. I loved my mom’s curry so much I would eat 2 servings. It probably led to my weight gain during middle school… In high school, I would eat it with quinoa since it was lighter than rice. Since college, I now make my own curry. I was worried it would taste different, but with the spices it’s pretty much the same!

カレー*

小さい頃から家族はよくカレーを食べました。いつも箱はジャバカレー辛口。お母さんはローリエ、ツメクサ、シナモンを足してコクの深みを増す。お母さんのカレーが美味しくて2杯も食べてました。多分それで中学時代は少し太ったのかも…高校時代はごはんの代わりにキヌアで食べました。そして大学からは自分でカレーを作りました。味は変わるのを恐れたが、スパイスを足せばほとんど同じ!

In early November, my foodie partner and I went to a huge conventional market in Seoul. It was overwhelming with the people and amount of stalls. One section was vegetables and fish, then meat, another roots and herbal ingredients, with fruit in the back. We ate lunch there too which was delicious and fresh but that’s another story. Back to our grocery shopping! In the end, we didn’t buy a lot because it was difficult to decide which vendor to buy from. But we purchased seasonal chestnuts, sweet potato, a huge bag of dried squid and purple sweet potato chips! I can’t wait to go again and try the fruit!

The stall for the chestnuts had a chestnut peeling machine and the lady gave us freshly peeled chestnut to try after peeling ours. I was skeptical at first but the raw chestnut tasted sweet! For the sweet potatoes, the owner had 3 different types. We bought the normal type but she gave us a couple of the other types as service. One of the sweet potatoes ended up being not that sweet and not fitting for baked sweet potato.

With these seasonal ingredients, I wanted to bake some sweets! The chestnuts turned into marron paste and marron glace. It was my first time though, so I still need more practice. With the sweet potato, I decided to make a pound cake instead of the usual sweet potato only cake. I mixed in a sweet potato cream paste with the hope of a marble effect. The cream was too soft which made the pound cake weak but still tasted delicious!


さつまいもパウンドケーキ

11月上旬に彼とソウルにある大きい市場に行ってみました。人と売店が多くて二人で圧倒されました。一箇所は野菜と魚、そして肉、また根菜と漢方材、最後には果物。小さいレストラン通りもあって、そこでお昼をすませた。新鮮で美味しかったけど、それはまた次回に。買い物の話に戻ります!結局、どの店で食材を買うか迷ったからあまり買いませんでした。今旬の栗、さつまいも、そして大きい袋のスルメと紫芋チップスを購入。また今度果物を試してみたい!

栗の売店は栗剥き機があって、おばさんが私たちの栗を剥いた後、試食の生の栗も渡されました。最初は疑ったけど、食べてみたら甘い!新鮮な栗は生でもいける!さつまいもは3種類あったけど、普通のを選び、サービスで他の種類ももらいました。一つの種類は甘さ控えめで、焼き芋には合わなかった。

帰ったら、この旬の野菜でデーザト作り!栗はマロンペーストと栗の甘露煮。初めてだったから、失敗ではないけど、修行が足りない。さつまいもは普段さつまいもだけのケーキを作るけど、今回はパウンドケーキに。さつまいもクリームを足してマーブルにしようと。でもクリームは柔らかすぎで、崩れやすいパウンドケーキになってしまいました。味は良かったけどね。

Whenever I travel, the week before is always spent trying to use up food in the fridge. Before my parents arrival and the following 2 week trip to Japan, it was a fight against the clock to finish using anything that would go bad. I also had to make something that would be substantial enough for my foodie partner’s dinner. Chives, onions, with some minced meat in the freezer… what to make? After scouring cookpad (a popular Japanese shared recipe site), I found something easy and yummy! It was a big hit and the chives didn’t go bad!

Unfortunately, when I returned yesterday, I found our clementines were in a shocking state…green mold!


ピリ辛ひき肉のネギごまパスタ

旅行に行く前の週はいつも冷蔵庫の野菜の使い切ろうとします。この前両親がソウルに来て、その後2週間日本で旅行するから、急いで冷蔵庫を空にするのに必死でした。ついでに、彼のためにちゃんとした夜ご飯も作らないといけない。玉ねぎ、ニラ、冷凍したひき肉…何が作れるか?クックパッドを探った後、簡単で美味しそうなレシピを見つけ!評判良くて、ニラも使い切れた!

だが、昨日帰ってきたら、みかんが悲惨な状態…緑色のカビが!

1 carrot
1 onion
handful of chirimenjako (dried baby sardines)
salt and pepper

1. julienne the carrots and slice the onions
2. add oil to a pan and stir fry the vegetables.
3. once the vegetables are slightly soft, add the chirimenjako
4. salt and pepper to taste

A couple of weeks ago, I had enough cooking supplies and ingredients to start cooking. Since I was only cooking for myself before, it was easy to cut vegetables and call it a meal. But now, cooking for someone else, it’s really not fair to feed someone rabbit food… I already had a main dish, rice, and some soup but I needed one more side dish. I was still missing a handful of condiments, so I decided to create something simple with what I had. Lots of vegetables with calcium from the dried fish! It ended up being delicious and perfect with rice. 1 point for me!


人参玉ねぎ炒め
(2〜3人分)

1個  人参
1個  玉ねぎ
一掴み ちりめんじゃこ
少々  塩胡椒

1. 人参と玉ねぎは千切りに
2. フライパンに油をひき、人参と玉ねぎを炒める
3. 野菜が少ししんなりしたら、ちりめんじゃこをたす
4. 味を確認しながら塩胡椒

数週間前、調理道具や調味料が少し揃ったので、料理を再開しました。一人暮らしのとき、野菜を適当に切って、夜ごはんとすましたけど、彼にそんな悲惨な食事を食べさせるわけにはいかない。ごはん、スープ、おかず1品は出来上がってたけど、あともう1品足りない。でも調味料の種類が少なかったので、あるもので簡単なものを作ることにしました。野菜たくさん&ちりめんじゃこでカルシウム!以外と美味しくて、ごはんにぴったりでした。+1点!
